The first of our ‘Wooden … it be nice!’ program, KnottyBits is a wild ale aged on sweet and sour cherries, and rhubarb. Teaming up with our friends at Fifer Orchards, KnottyBits was first wood-aged for a year with Brettanomyces Bruxellensis, then racked onto several hundred pounds of sweet and sour cherries, and locally sourced rhubarb from Fifer Orchards at a rate of more than 2 lbs. of fresh fruit per gallon! KnottyBits is bottle conditioned for an elevated carbonation that resembles a rose-colored sparkling wine of sorts, and is a perfect balance of funk and acidity.

Clocking in at 8.2% ABV, KnottyBits is priced at $10 per 375ml bottle, with 2,000 bottles available for purchase at our Milton Tasting Room & Kitchen beginning Sept. 29 at 11 a.m.

Bourbon Barrel Aged Quad

Bourbon Barrel Aged Quad

Way back at the end of last year, we put away a few bourbon barrels of this Belgian-style Quadruppel ale and let it rest for about 8 months.  Brewed with Belgian candi sugar, cherries and plums and fermented with a Belgian Trappist yeast, it's rich and fruity with complex malt and sugar profiles.  The barrel aging added a soft coconut and toasted oak flavor and brough notes of tawny port and bruleed sugar to the mix.  It's a sipper at 12% ABV

Drum roll, please! Now in our seventh year as the official craft brewery of Firefly Music Festival, we took our beloved Firefly Ale - an English-style pale ale - and remixed it with a little help from a few thousand of our closest friends!

During the week of March 12, 2018, both Dogfish and Firefly took to our social media channels to ask fans to take part in creating a unique spin on the original Firefly Ale. With a pale ale as the base, folks had the chance to choose between grapefruit, yuzu or guava as the new featured ingredient for the 2018 remix of Firefly Ale.

The results? The freshly twisted Firefly Ale mashup is brewed with guava puree and coconut flower nectar, and dry-hopped with Citra, Mosaic and Galaxy hops. Clocking in at 5% ABV, this complex summer sipper is full of tropical fruit notes with a subtle sweetness. The perfect sessionable pale ale for those days and nights in The Woodlands!

The Bitches is back, only this time we aged it our oak and Palo tanks! An off-centered twist on our classic Bitches Brew, Wood-Aged Bitches Brew is still the same bold, dark, Imperial Stout you know and love!

Originally brewed in honor of the 40th anniversary of the release of Miles Davis’ 1970 landmark Jazz fusion record Bitches Brew, our ‘remix’ is a gustatory tribute to that analog masterpiece.

Much like Jazz fusion, which blends different musical styles, our Wood-Aged Bitches Brew is a fusion of three threads of Imperial stout aged on oak and one thread of Tej - a native African honey beer - aged on Palo.

The result is a roasty brew chock full of aromas of vanilla, licorice and chocolate, while you’ll find notes of sweet roast coffee with every sip. It’s slightly dry in the mouthfeel with a mild bitterness that make it the perfect sipper.

Dogfish Head founder & CEO Sam Calagione says Wood-Aged Bitches Brew is best when “sipped cool, not cold, from a snifter or red wine glass while listening to the Bitches Brew album.” We like the sound of that.
