Behind the curtain: For busy brewing team, communication is key to great beer

Wednesday, October 08, 2014

It’s 6 a.m. and dark outside. It might seem quiet here in tiny Milton, Del., but inside the main brewery control room, it’s a different story.

There are lots of moving parts, and an exchange of vital production information is taking place. It’s shift change.

As I sip my coffee, I listen to the important happenings from the previous shift, learning where in the process production is. My co-workers and I then decide who will do what. There are two brewhouses to run, an advanced filter system to operate, multiple cellar tasks, as well as the ever-demanding world of yeast management. Lots to do! Who knew being a brewer would involve so many different undertakings?

As I finish my coffee ready to begin the day’s work, I reflect on how fortunate I am to be a part of this “off-centered” brewing team. In brewing school, the focus seemed to be on the science and operations of a functioning brewery (both important), but here I have learned it takes more than that to make a beer. It takes teamwork and collaboration – we are all dependent on one another.

There are so many functions that need to happen (lots within a limited frame of time) that communication is key. Our ability to work together and complete operations in tandem is the difference between a good and bad beer. Thankfully, everyone here is so enthusiastic about making great beer that it fosters a climate keyed into progress and growth.

As the youngest on the team, I have a lot yet to learn, but I know the more seasoned brewers and supervisors are always willing to lend a hand. They are eager to share their knowledge and help troubleshoot problems. With our portfolio filled with complex beers like Red & White, Noble Rot and Kvasir (to name a few), this shared knowledge is critical to orchestrate the multitude of complicated tasks necessary to make these brands come to life.

But this communication doesn’t just end with brewing. We are constantly working hand in hand with other departments, from quality control, packaging, scheduling and so many more, to make sure that not only is the beer outstanding, but consistent and worthy of the shark and shield.

With all these functions, teamwork is essential for our operation to be successful. The time is now 6:30, shift change is over. Time to puree some lingonberries!
