Brewed with co-worker Michelle, A Thoughtful Note is a raspberry lactose sour brewed from two-row barley malt, wheat and oats. The wort was kettle soured with lactobacillus delbrueckii, and seasoned with fresh rosemary and sage, along with a gentle dose of Willamette hops. This tart pleasure was dosed with raspberry juice and lactose for fruity goodness accented by herbal sensations.
