Lil’ Tart

Lil’ Tart is a pink champagne-hued sparkling wheat beer brewed with a load of tart cherry and peach purees.  This ale was brewed with an ever so slight nod to Belgian Lambic, but in our own funky Southern Delaware kinda way.  German Heidelberg malt (similar to pilsner, but lighter) was blended with a large portion of unmalted and malted wheat for the grain base.  4 year old whole leaf Amarillo hop flowers were used to provide antiseptic qualities without flavor and bitterness.  The 126 lbs of cherry puree and 50 lbs of peach puree were added in the whirlpool, right after the boil.  Then Lil Tart was transferred over to the tank and fermented with a blend of our DNA wild yeast (originally cultured from Fifer Orchards) and two different Bavarian yeasts – one neutral ale strain, and a Bavarian wheat strain.  The aroma is filled with tart cherry and peach, and the flavor mimics the aroma, but with a delicate malt background behind the fruit.  This one is the quintessential beer to enjoy out on the deck on these warm sunny Rehoboth spring days.

Lil’ Tart goes on tap May 14, 2012 and will be available until it is gone. Due to limited availability, our Brewpub Exclusive beers are not available in growlers.
