Waste Not, Wit Not
We reclaim our process water at our Milton brewery to irrigate about 100 acres of farmland in support of sustainable agriculture. This year we harvested some winter wheat from that land and used it to make a Belgian-style Witbier. To complement the spiciness of the wheat we brought some citrus and floral notes from tangerine peel, lemon slices, chamomile and grains of paradise.
