Pivo Prossim ("PEE-voh prah-SEEM") is Czech for "Beer Please." Why complicate the simplicity of a classic Czech-style pilsner with some fancy name or a bunch of extra ingredients? Brewed with Moravian pilsner malt and mashed using the traditional decoction method, it has a light, toasty malt character to balance the Czech Saaz hops that were added during the boil and whirlpool. After a slow and cold fermentation, it was lagered it for 30 days for a wonderful, clean spicy hop character and crisp finish.
