Pivo Prossim ("PEE-voh prah-SEEM") is Czech for "Beer Please." Why complicate the simplicity of a classic Czech-style pilsner with some fancy name or a bunch of extra ingredients? Brewed with Moravian pilsner malt and mashed using the traditional decoction method, it has a light, toasty malt character to balance the Czech Saaz hops that were added during the boil and whirlpool. After a slow and cold fermentation, it was lagered it for 30 days for a wonderful, clean spicy hop character and crisp finish. Served unfiltered to maintain the delicate balance of flavors, just say "Pivo Prossim" to your server. It's the only Czech you need to know.
