We really wanted to let the hops do all the talking with this IPA. The malt bill was kept simple, using only 2-row Pils malt. For the brewhouse hops, we used one of our favorites, Palisade, for all bittering, flavor and aroma additions. We're also digging the tropical stuff they're gowing Down Under, so we tossed a boatload of Australian Galaxy hops in the fermenter while it aged. We like how these two play with each other - floral and apricot notes from the Palisade and juicy passion fruit and citrus from the Galaxy.
