Found Objects

Sometimes found objects can yield treasures. This beer features byproducts resulting from the production of coffee and chocolate ... and trust us, the liquid these leftovers make is worth being treasured! We began with a stout base and added coffee cherries, the fruit that surrounds the coffee bean. Also know as cascara, these are mostly used as compost; however, when dried and steeped in the wort, they provide a sweet, raisiny flavor. After fermentation, we aged the beer on cocoa shells, the hard shell that surrounds the cocoa nib. Though normally used for landscaping mulch, the cocoa shells still provide heaps of chocolate flavor to this rich, dense stout.
