Brett Lacks Toes

Brett Lacks Toes is an experimental beer brewed to explore the effects of short term, high temperature fermentation of a Brettanomyces yeast strain introduced to wort being kettle soured by Lactobacillus.

Brewed from a blend of Vienna and Malted Rye malts, this beer's gently sweet and bready malt flavors carry its more tart flavors of lemon and berry. Clocking in at 3.5% ABV, Brett Lacks Toes' final fermentation was completed with a French saison yeast strain to create a dry and tart brew beautifully balanced with delicate spicy and earthy aromas.
