Last week, we brewed the second beer for our Province Ale Co. project. The recipe was for a golden ale containing 25% rye malt, baking powder (not to be confused with baking soda) and 5 year old aged hops that have been candied with a homemade invert syrup (cane sugar boiled down with a squirt of lemon juice). We will add sage in the fermenter. Additional fuggles hops were added late in the boil, so this beer should have a nice earthy, spicy and herbal character.  It will be fermented with a Scottish ale yeast (spiced and herbal beers were once the norm in Scotland).

 

In just the first days of this new year-long project, we've sold more than half of the handmade journals to fellow beer lovers who will go on this creative journey with us.  But don't worry - there are still sixty journals left!

Province Ale Porter, the first in the series will return with the Feb. launch of the second beer, so there is still a chance to join in and experience the first two beers.  Do come to the Rehoboth pub and become an 'investor' in The Province Ale Company!
