Province Ale Company returns with English pale ale and a delicate delicacy

Revisit brewing history this Saturday with the Province Ale Company, a wholly-owned, purely imaginary subsidiary of Dogfish Head.

This month, brewer Ragged Jordan has prepared Windsor Ale, an English-style strong pale ale. It's brewed with English Optic and Halcyon pale ale malts and East Kent Golding and Fuggles hops. "This one's pretty normal," says Ragged.

Chef Joseph Arsenault is the one veering way off-centered this month with Bukk Frites, also known as Rocky Mountain oysters. As Chef Joseph tells it, "Every spring, the cowboys would choose one or two male calves that would be used for mating, then pasture the rest. They'd castrate around the same time and hold a giant party with these delicacies. We are bringing to life the joy of this springtime festival."

And don't worry if you missed last month's beer. We held back a keg so members and newcomers can catch up and join the 12-month run of antique ales.

The beer and Bukk Frites will be available starting at noon on Saturday.
