Pallet looks and feels more like a coffee table book than a regular magazine. Printed on deluxe, uncoated stock and perfect bound, for issue two the cover is even thicker and embossed.

Beery stuff includes “Brews Willis” beers inspired by the films of, you guessed it; a (kinda) beer with comedian and muso Reggie Watts; conversations with career barkeeps from Tokyo to Durban; and what it takes to make booze in prison (which was written by Executive Editor Sam Calagione). Non-beery stuff includes packing for an apocalypse; photos inside the Japanese mafia; cradle-to-cradle industrial symbiosis; six months on the road with young band All Them Witches, a profile on writer-turned-painter Dave Eggers; and short fiction that revives a tired and mistreated genre, the western.
