Konichiwit

Konichiwit is a scaled up batch of a beer that was originally brewed solely for our Pangaea dinner and was paired with a sushi dish for the opening course.  With that pairing in mind, this Belgian Style Wit Bier was made with ingredients inspired by the Land of the Rising Sun.  Traditionally, Wits are around 50% wheat and brewed with orange peel and coriander giving them a zesty spiced character.  Instead of the usual spices, we took fresh ginger root and wasabi (yes, REAL fresh wasabi) to give the beer a spicy kick and then instead of Orange Peel we used Japanese Yuzu citrus juice. Yuzu is a native East Asian fruit similar in flavor to grapefruit but with a more piney flavor and aroma.  The result is a wonderfully refreshing and drinkable wheat beer with notes of ginger and a slight almost mustard-seed-like funk from the fresh wasabi with a very gentle acidity.  This ale is a great pairing with the standard pub salad, hummus platter, spicy calamari, and fish tacos.

Konichiwit will be tapped at noon on Friday, June 8, 2012 and will be available until it is gone.
