Sam is heading over to Sheffield's for a beer and cheese event with cheese guru Dave Phillips.  Sam will talk beer.  Dave will talk cheese. Lots of cool cheeses and Dogfish beers. 
 
Here is the skinny.... Join Dogfish Head Craft Brewery owner/brewer Sam Calagione and cheese expert Dave Phillips at a beer and cheese pairing at the cozy Sheffield's in Wrigleyville.  Snuggle up next to Sheffield's fireplace, and prepare yourself for a roller coaster ride for the taste buds.  Stinky cheese and funky beer rule the night.  Seats are limited. 
 
The fee covers a sampling of twelve Dogfish Head beers, including 90 Minute IPA, voted the best beer in America by the New York Times.  Other beers offered will include Chicory Stout, Olde School Barleywine, and more.  There will be eight total draft selections, a feat never done before in Chicago.  Ten cheeses will be sampled from "The Cheese Stands Alone," a local cheese monger, in Lincoln Square, along with some bbq from Sheffield's new kitchen.
 
Sam will digress tales about SoDel. Like the fact, Dogfish Head has recently added wooden fermenters to their facility, to fuel further expansion.  But mostly, Sam will talk about the beer, and Dave will talk about the cheese.
 
As for Dave... David Phillips is a longstanding member of the Chicago Beer Society and the American Cheese Society. He has conducted cheese and beer tastings at the American Cheese Society's Annual conferences, and at Chicago Beer Society events, and elsewhere. Phillips was also one of the chief organizers of the beer society's Curds and Ale event in 2006, which is thought to have been  the single largest contemporary collection of artisan cheese and craft beer pairings. He is also an experienced homebrewer and homebrew judge, and he writes about artisan cheese as chief editor of the monthly national trade magazine Dairy Foods.
