Dogfish seeks Night Owl
Dogfish Head Craft Brewery is seeking an experienced production brewer, who is dependable, self-motivated, quality oriented and digs working third shift. You will play an important role in helping us actively crank out more beer in a 24 hour period for the critical purpose of increasing supply. Folks, they’re drinking it as fast as we can make it and this is why we need someone like you! In addition to performing daily brewing operations, you will also be responsible for performing cellaring work and all necessary cleaning schedules on the third shift. With minimum oversight from the Lead Brewer, you will be looked to as the Leader of the Night, coaching and guiding the third shift Brewer as needed, and documenting and diagnosing issues as they may arise. If you are the kind of person who can roll with change and who welcomes opportunities, both big and small to challenge yourself, than this may be the opportunity for you. The successful candidate will be reliable and takes a sense of pride in their work. You should be off-centered stickler but also stickler about procedures and guidelines, including following recipes per exact specification and implementing detailed cleaning regiments. Must have had formal training at an accredited brewing school or Associates degree in an applicable science. Must have a minimum of 5 years’ practical brewing experience in a production environment. Must be able to lift 55 pounds, twist/turn, reach over shoulders, bend/stoop and stand/walk on a continual basis. Familiarity with our products is a plus!

Essential Functions:
• Mills grain per upcoming brew and stages accordingly based on recipes and procedures.
• Facilitates the production of wort, including maintaining proper boil, addition of hops and other ingredients per recipe prior to being sent to ferment at desired temperature and within quality guidelines.
• Conducts mashes according to the volumes, temperatures and times described per recipe being produced.
• Lauters efficiently to collect wort of acceptable quality and within target gravity for the brand being produced.
• Performs rigorous cleaning schedules and procedures, including by process, i.e. removal of spent grains, by equipment, i.e. CIP of wort lines, tanks, vessels and general housekeeping, i.e. ensuring brewhouse and work areas are clean and sanitized regularly.
• Performs Cellaring operations as required, including filtering, yeast/fermentation management, dry hopping and any necessary CIP work that must be performed to perform those tasks.
