Organic grass fed beef from Red Brook Farms. Stuffed with a Humboldt Fog goat cheese, fresh spinach, and shiitake and porcini mushrooms. With an Indian Brown Ale demi-glace, fresh herb roasted potatoes and brussel sprouts in a brown butter sauce.
