Beer & Cheese with Dogfish Head and Wasik’s of Wellesley
What’s hoppy, complex, delicious, goes with cheese but isn't wine? Beer!
We will be sampling four unique Dogfish beers that will be paired with eight (2 each) unique cheeses. Hear from the cheese monger Brian Wasik of Wasik’s Cheese Shop in Wellesley and from Allen Reitz, New England Sales Manager for Dogfish Head Craft Brewed Ales out of Delaware.

Here’s the line-up:
90 Minute IPA - An Imperial IPA brewed to be savored from a snifter. It has a great malt backbone that stands up to the extreme hopping for 90 continuous minutes with Warrior, Amarillo and “Mystery Hop X.” 9% ABV

- Caved Aged Gruyere – Swiss Alps (Cow)
- Creamy Samaitrain Berthaut – Bongogne, France
Raison D’Etre - A deep mahogany ale brewed with green raisins, beet sugars and Belgian yeast. 8% ABV The red wine of beers!
PAIRED WITH
- Berkshire Blue – Western Mass (Cow)
- California Clothbound Cheddar
Palo Santo - An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means "holy tree" and it’s wood has been used in South American wine-making communities. This beer is a 12% abv, highly roasty, and malty brown ale aged on the Palo Santo wood.

Midas Touch - The GOLD MEDAL winner at the 2004 Great American Beer Fest this somewhat sweet beverage is based on the residue found on the drinking vessels in King Midas' tomb. Our recipe highlights the known ingredients of barley, white Muscat grapes, honey and saffron. Somewhere between a beer, wine and mead, this smooth, dry ale will please a Chardonnay or I.P.A. drinker alike. 9% ABV
