

Hello Everyone!!!
First I would like to say I am a huge fan of your beers and culture you guys permiate. I have been home brewing for a few years and have recently gotten into trying to brew higher ABV beers. I wonder if you had any tips on how to do this on a 5 gallon level. I have been using kits like for a double IPA and then adding more fermentables into the boil, then feeding they yeast with either simple sugar or honey every other day. I have been using a double dose of chamapgne yeast, my problem is the end flavor, and aging. Is it normal for a high abv beer to require a lengthy ageing before it is drinkable?
