Extreme Brewing Sour Cherry Ale

Hello,

First post here... I'm brewing the Sour Cherry Ale from Sam's book and found that the directions aren't complete...

The ale is currently in secondary... after my hydrometer readings leveled off, I removed the beer from the cherries... but I'm unsure how long to let it sit in secondary now....

Any advice would be appreciated... I'm just taking the training wheels off with this whole brewing thing.

sour cherry ale

Like Joe (above), we are about to brew the sour cherry ale recipe in Sam's extreme brewing book.  I've located fresh sour cherries several hours away and we are hitting the road!

 

My question is also whether there is additional information available about this recipe...how long in primary?  how long in secondary?  how long in the bottle?  does it make sense to add more cherries in the secondary?  And as long as I'm asking...if I buy 10 lbs of cherries fresh and then freeze them before using them in the brew should I use 10 lbs or 7 lbs?

 

Sorry for so many questions.  We have high hopes in this beer and want to do it right. 

 

Any assistance would be greatly appreciated.
