I tend to not like high ABV beers, both because I can't drink as much of them and because they tend to be too sweet for my palate. Nevertheless, I'm very interested in DFH's experimentation with beers--especially the archaeologically correct ones. That leads me to wonder whether DFH or any other craft brwery, has ever considered reproducing some of the Colonial style brews that used things other than hops--such as ground-ivy--for bittering, or the (then) very popular small-beers?Also, When I was a youngster in the 40's & 50's, it seemed as though each little community in WI had its own brewery, sausage factory and cheese factory. Has DFH ever considered recapturing some of the (pre-Big-Beer takeover) brews made by those local breweries that used to dot the countryside?
