

So, the good news is that the tests we have been running to dial in the 120 Minute IPA recipe are showing great progress! A couple weeks ago we sat down over three different vintages of 120 to gauge the way the beer is aging. The best batch we tried we tried was the oldest. In my opinion, 120 gets great after about a year in the bottle, but taste is subjective and some people like it fresh.
What isn't subjective is predictable and consistent fermentability and hop utilization. Not to get full-on techno-beer-geek with you, but this the final frontier we are trying to predictably bring in sight before doing the next huge batch of 120 Minute IPA for national distribution (we really don't want to have to dump another batch!). We thought we'd done enough test batches to move to this step last month but we decided we need to do another test batch. The next batch will be happening at our Rehoboth brewpub shortly.
So a little bad news... there won't be a new batch of 120 in distribution before early next year.
Tempered by a little hopeful news... if the next test batch of 120 goes well at the R&D brewery in our Rehoboth pub and you happen to be in the area you might want to swing by and try it (we'll post it on the What's On Tap page when it goes on).
Sorry this has taken us some time to dial in.
We're not interested in selling any of our beers unless they meet our standards because we have high standards and we know you do too.

My dad and I are both huge hopp heads. Seeing as I live in Texas, and he in Tennessee, there's no way for me or him to get the 120. To add, he's getting deployed in a few months. He and I have always shared a commonality when it comes to beers, especially IPAs. I'd like to try this one with him before he's shipped out. Since he's coming for a week long visit, I'd love to get a couple bottles before or after Christmas; if it'd be at all possible. I know the amount of feedback you got in regards to shipping bottles was immense, but I was wondering if the offer still stands. Aging beer produces some marvelous results. John Hansell (of Malt Advocate fame) this summer brought by a bottle of Hardy's Ale he was aging in his basement for 15 years. I'm telling you, it tasted like Utopias. Carmel, vanilla....maple...It was unbelievable. Being a whisky drinker, aging really makes differences. I just found 4 bottles of the Bitches Brew (drank the other 6 - wonderful BTW) in a Polish Provisions Store in Brooklyn (next to the kelbasy). I'm stashing it away for 5 years to see what happens. BTW, Sam, ever thought of giving the wood ageing the go around? Alone the lines of Ola Dubh or Bew Dog’s Paradox? You are the king of all alchemists….I think your keep perceptions would certainly put the unique Dogfish Twist on it. If you ever need a volunteer , I’ll come down on my nickel for a week and help out – I am a Doc Brown. In the world of Whisky, there is this magical event that takes place between the wood and the spirits. You take a spirit fresh from the still….age it in a barrel, next thing you know, you have magnificent tastes of vanilla, caramel, citrus amongst just a few. Remember all…..Whisky is distilled beer. Headed down to Rehoboth Dec 4th, bringing a bottle of 2003 120 min if you are around to sample. Look for some clowns in a Heavyweight brewing shirt, that would be me and my wife if you are around. Waited too long to drink alone, 120 is made to be shared.
