This little intern went to the brewpub. This little intern went for some beer. And this little intern went oink, oink, oink, all the way to Swallow Acres! You got it...this little intern went to visit the piggies! Swallow Acres is a family run operation located in Georgetown, Delaware. Brooks and Lisa Truitt started this adventure roughly 4 years ago, and have since added chickens, goats, herbs, and produce-- they've got it going on! Greeted by Lisa, she and her two children became my tour guides, a real family affair. Swallow Acres features everything from squash to lavender, talk about variety! Then I heard the sound I had been waiting for...oink, oink-- there they were, the piggies, in all their glory (and mud)! With the extreme temperatures Delaware has been facing, Lisa turns the hose on for the pigs. The result- some very muddy, super happy, much cooler pigs. Looking for some baby piglets, I learned that 3 months was the youngest of this group. But-- there are two females expecting in early August! I think I see another visit in my near future. I noticed that the pigs had free reign of the land...so what does that mean for their health, food, and all things pig? The Truitt's have worked to be as natural as they possibly can. Keeping the herd internal has greatly reduced the risk of disease. They have also refused to use synthetic pesticides, herbicides, or fertilizers. Striving to work with natural systems for pest control and fertility, their approach is a combination of organic and bio-intensive methods. That all sounds good to me, but does chef Dennis know how great this place is?? "Our own pigs fed with our grains from the brewpub... Also, the Truitt's are just good people that I enjoy working with." It sure sounds like he knows! While I could have spent the rest of my night giggling with the piggies, I sadly had to venture home. Before I left, however, Brooks picked me a beautiful bouquet of herbs and some very tasty-looking squash. From one of the most famous pigs of all, "thats all folks!"
