The third installment of our 2013 DNA Series, Late Summer Harvest was made with beautiful Sweet Baby and Yellow watermelons from Fifer Orchards (Wyoming, DE) and super fresh Organic Thai Basil from Herbs, Spice, Everything Nice (Selbyville, DE). Using the same Saison base as our first two releases – pilsner malt and Local Wildflower Honey from Bee Natural (Smyrna, DE), the watermelons add subtle fruit notes while the basil lends a funky herbal spice. Fermented with our Delaware Native Ale yeast and finished with a saison strain, this is a great sipper on these final warm days before the cool Autumn air transitions us into winter. Enjoy it with one of our fresh salads or our Chef’s Catch of the Day.
